Ingredients for Plum No Churn Eggless Ice Cream:

No Churn Ice-Cream

150gm Whipping Cream, chilled
75gm Condensed Milk
1/4tsp Vanilla Extract
2-3tbsp Plum Compote
2tbsp Plum compote (Swirl Pattern)

Eggless Biscuit:

75gm Unsalted Butter, Room Temperature
50gm Brown Sugar
50gm Caster Sugar
1/2tsp Vanilla extract
100gm All purpose Flour
25gm Cocoa powder
1/8tsp Salt
1/4tsp Baking Soda
15gm Milk

Method:

Ice cream:

  •  Whip the chilled whipping cream to soft peak stage, add in condensed milk, vanilla extract and Plum Compote.
  • Transfer to a pre lined tin and pour the Ice cream mixture alternating with the plum compote to make a beautiful swirl pattern.

Eggless Biscuit: 

  • Cream Butter and both the sugar; Brown and caster sugar, till light and fluffy, then add vanilla extract and mix.
  • Add rest of the Ingredients and gently fold in until no flour is visible, do not knead the dough.
  • Roll it between parchment sheet to a thickness of 1/4inch and poke with fork, Bake these in a pre heated Oven at 180C for 8-10 minute such that the edges are set yet the centre is soft.
  • Cool them completely

Assembly:

  • Scoop out the set Ice cream using the same round cookie cutter or the one slightly smaller then used to shape cookies.
  • place the scooped Ice cream on to one cookie (facing upside down) and sandwich it with other cookie, freeze it for an hour or two so that the Ice cream sets again while the cookie becomes soft yet not soggy.
  • You can also wrap the individual Ice cream Sandwich in cling film or plastic wrap this will help them retain their shape.
